SHEEP MILK-CHEESE SUPPLY CHAIN

This supply chain is characterized by a widespread presence of organic farms and the offering of very distinctive products on the market, the three PDO sheep cheeses (pecorino romano, pecorino sardo, fiore sardo) which, however, for some years now, have also had to face competition from other sheep cheeses from the Mediterranean area. There are several organic sheep farms, but most of the Sardinian organic sheep milk is processed in the “conventional” circuit and does not become organic cheese due to processors’ limited ability to penetrate the organic production market.

In this supply chain too, there is room for growth, especially if the already advanced experimental processes of production diversification are developed to expand the range of pecorino cheese offerings toward modern consumption types, beyond hard paste cheeses like the three PDOs.
In this supply chain too, the presence of OP S’Atra Sardigna, also recognized for organic cheeses, can be a development driver, in addition to the operation of some farm dairies that already develop the short supply chain.
