CEREAL-BREAD-PASTA SUPPLY CHAIN.

This essentially concerns the durum wheat supply chain, which has only recently developed in the organic sector due to two factors:
The regional supply chain agreements established over the years by the S’Atra Sardigna cooperative with about ten organic cereal growers, a mill (Secci), bakers (Casti, Ferreli), and pasta makers (I Cagliaritani and Secci itself).
The technical assistance provided by the Agris Sardegna Agency, which has qualified the supply chain both in the production and transformation phases.

There is significant growth potential both in pasta and bread (especially for carasau and pistoccu and for the “whole grain” line). Regional incentives for supply chain agreements have encouraged several organic producers to plant durum wheat. Much work is needed to connect the production and transformation supply chain to Sardinian food craft businesses and to build local market outlets.
